We are in Veggie Heaven!
Granted some smaller members of my family aren’t quite as thrilled with all the garden-fresh meals we’ve been enjoying lately, but as a vegetarian I don’t think I’ve ever eaten so well. Every week we pick up a new very full box of vegetables from Worden Farm & I spend the week trying to think of new ways to use them.
It is definitely a challenge, but I love it. It has inspired me to be far more creative in my cooking–I’ve cooked more new things in the past 3 weeks than in the 3 years–and I feel so much better about quality of the food we are putting on our table.
Over the next few months, as we work our way through this Worden Farm season, I’ll hopefully have lots of new vegetarian recipes to share with you, but today I thought I’d start with the one that was the biggest hit of all: Roasted Tomato & Root Vegetable Cream Sauce over Farfalle. It sounds fancy but it was really simple & a definite crowd pleaser.
Roasted Tomato & Root Vegetable Cream Sauce over Farfalle
1 medium sweet potato, peeled 2 beets, peeled 2 turnips, peeled 4 tomatoes olive oil 1 1/2 tablespoon oregano, divided salt & pepper 2 8oz cans tomato sauce 1 teaspoon minced garlic (more or less to taste) 1/2 cup heavy cream 1 box farfalle pastaPreheat oven to 4oo degrees. Chop root vegetables & tomatoes into chunks. Place in a large bowl or bag, then drizzle with olive oil & sprinkle with 1 tablespoon oregano and salt & pepper to taste. Mix or shake well, until all chunks are coated.
Spread vegetables over foil-covered cookie sheet and roast for approximately 30 minutes, until tender.
Meanwhile, heat tomato sauce in a large saucepan over medium heat. Add garlic and remaining oregano. Let simmer. Boil water for pasta. When there is about 5 minutes roasting time left, prepare pasta according to package directions.
When vegetables are finished roasting, add them to tomato sauce. Stir in heavy cream. Bring just to boiling then reduce heat and let simmer until pasta is ready.
Serve and enjoy!

Can you recommend a website for someone that doesn’t cook very well? My family is tired of eating my stockpile since it seems to be lots of prepacked foods. It seems like most of the sites I find have recipes that call for things I don’t use on a regular basis.
