Easy Corn Flake Chicken {Recipe}

If you are looking for a quick and super easy chicken recipe that your family will LOVE, then look no further!  I whipped this up last night and even though I had planned to share a different recipe, it was such a hit I decided to share it with you today!

As a vegetarian I don’t cook chicken that often.  It’s not because it bothers me, but mostly because I don’t eat it, I have a hard time knowing whether it is done, and out of a desire not to poison my family, I end up overcooking it.  It turns out dry and then no one eats it and I get frustrated and avoid it all together for the next 6 months or so.

Luckily for me, this recipe is pretty much foolproof and the chicken turns out nice and moist with almost no effort at all.

Corn Flake Chicken

3-4 skinless boneless chicken breasts
4 tablespoons butter, melted
4 cups corn flakes
1 tablespoon oregano
1 teaspoon ground thyme
1/2 tsp crushed thyme
1 teaspoon ground mustard
1/2 teaspoon dry rubbed sage
1/4 teaspoon pepper 
1/2 teaspoon salt

1.  Preheat oven to 375 degrees.  Place corn flakes & seasonings in gallon size freezer bag.  Seal bag tightly and crush corn flakes with rolling pin.  Shake to make sure seasonings are evenly distributed.

2.  Brush bottom of glass baking dish with butter.  Brush chicken breasts with butter, then place in bag and shake until coated with corn flakes.  Arrange in single layer on baking dish.  When all pieces have been coated, sprinkle tops of chicken breasts with additional corn flake crumbs, then drizzle with remaining melted butter.  Bake for approximately 30 minutes.

As an alternate option, you could cut the breasts into smaller strips to make chicken “fingers.”  (They would bake a little faster that way!)
