homemade zucchini bread {stockpile meals}

I am in Nashville this weekend having SO much fun meeting lots of fabulous bloggers at Blissdom, but I wanted to share this recipe that I made last week.  I was so excited when I opened my Worden Farm Box last week and discovered 4 delicious looking zucchini way down at the bottom of the box.  It was the perfect excuse to make a big batch of homemade zucchini bread, something I’ve wanting to do for months!

Homemade Zucchini Bread

4 medium zucchini
4 cups all-purpose flour
2 1/2 cups whole wheat flour
1 tablespoon baking soda
1 tablespoon baking powder
2 tablespoons ground cinnamon
8 eggs
1 1/2 cups vegetable oil
3 1/2 cups white sugar
2 tablespoons vanilla
chocolate chips (optional)
 

1.  Preheat oven to 325.  Grease and flour 4 loaf pans.  Grate zucchini to make approximately 6 cups; set aside.

2. In a large bowl, mix together flour, baking soda, baking powder, & cinnamon.  In separate bowl or Kitchenaid, beat together eggs, oil, sugar & vanilla.  Add dry ingredients to wet mixture and mix until combined.  Divide mixture into 4 pans.

 3. (Optional) Ccver bottom of pan with semi-sweet chocolate chips before adding mixture for black-bottomed zucchini bread.

One of things I love the most about this recipe is that makes a LOT of zucchini bread–more than enough to share!  What a great excuse to pop in on a friend or  surprise a neighbor.  After they cooled, I just wrapped them in saran wrap then found some cute scraps of fabric, brown kraft paper, & ribbon to make them pretty.  So fun!

Yum! Thanks for sharing this recipe and the fun addition of chocolate chips on the bottom. Cool idea. I love the way you wrap your baked gifts! It really adds that extra pop.
