This ridiculously easy french onion soup is quick and simple to make. The entire family will enjoy this hearty soup recipe for dinner!

When the weather is cold nothing quite hits the spot like a bowl of hot soup! This freezer-friendly French Onion Soup comes together surprisingly fast, but the yummy toppings make it feel extra special. It is also a great dish to serve for a light lunch, casual dinner, or alongside your favorite baked chicken recipe.

Easy French Onion Soup

Assemble your ingredients, sweet onions, butter, beef stock, salt, pepper, Gruyère, sliced cheese, Italian bread and fresh or dried thyme

Here is what you need:

4 cups sweet onions or Vidalia if in season, sliced
1/2 cup butter
2 cartons Beef stock
salt and pepper to taste
Gruyère, sliced cheese( cooking day only)
Italian bread, sliced (cooking day only)
fresh or dried thyme

Slice onions and set aside

Step 1: Slice onions and set aside.

Melt butter and saute onions and butter in pan

Step 2: Melt butter and saute 2 cups of onions in butter until soft and golden brown. Set aside and let cool.

Divide cooked onions into freezer bags

Step 3: In a large bowl mix together sauteed onions, raw sliced onions, and stock, then divide into gallon size bags. (be sure to label bags first). Freeze until needed.

Cook frozen french onion soup in slow cooker

Step 4: Cook in the slow cooker on high for 3-4 hours or on low for 4-5. Be sure to season with salt and pepper.

Slice Italian bread

Step 5: Once ready to serve; slice bread, butter it and toast.

Serve french onion soup with bread and cheese

Step 6: Ladle French Onion soup into crocks, place a slice of bread on top of the soup, and then cheese on top of the bread. Place under broiler for 1-2 minutes to melt the cheese.

Step 7: Once melted, sprinkle with some fresh Thyme and serve hot.
