White Chocolate Rice Crispy Treats

Assemble the ingredients for these yummy rice crispy treats: marshmallows, white chocolate chips, crispy rice cereal, sprinkles and butter.

Here is what you need:

1  12oz. box Rice Krispies or generic equivalent (which is about 10 cups )
2 10 oz. bags mini marshmallows
1 stick of butter, plus more for greasing the pan
1 12oz. bag of white chocolate chips, divided
Sprinkles (optional)

Grease the casserole dish with butter before you begin.

Step 1: Generously grease a 9×13″ cake pan or baking dish with butter.

Melt your stick of butter in a pan over low heat.

Step 2: Melt one stick of butter in a large pot over medium heat.

Combine the marshmallows and white chocolate chips for these yummy crispy treats.

Step 3: Add mini marshmallows and begin stirring with a heavy-duty spatula. Then  add 2/3 of the white chocolate chips and continue stirring.

Stir the marshmallows and white chocolate until the mixture is smooth and glossy.

Step 4: Continue stirring until marshmallows are completely melted. There may still be some small chunks of white chocolate–that’s okay.

Stir the marshmallow into the rice crispies until they're thoroughly coated.

Step 5: Slowly add the Rice Krispies to the pot and stir until cereal is completely coated with marshmallow mixture.

Pour the sticky rice crispy mixture from the bowl into the pan.

Step 6: Pour mixture (it will be sticky!) into your pre-greased baking dish.

Press the rice crispy mixture into the pan with your hand.

Step 7: Butter your hands, then press down cereal into pan.

Melt the remaining chocolate chips in the microwave in a small bowl. Prepare a frosting bag over a glass to add the icing.

Step 8: Melt remaining white chocolate chips in microwave. (Heat for 30 seconds, then stir, then repeat until melted. If mixture seems thick, add a tablespoon of vegetable oil.)

Snip the end of the bag off using scissors to create an icing bag for your rice crispy treats.

Step 9: Place melted white chocolate in a pastry bag (or Ziploc bag, in a pinch). Cut off tip (or corner) of bag, then drizzle over-top of cereal, then sprinkle with rainbow sprinkles. Refrigerate for at least 30 minutes to let white chocolate harden before attempting to cut into squares.

Drizzle the icing over the top of the rice crispy treats and add sprinkles.
