Have you ever forgotten to take the meat you need for dinner out of the freezer in time? Well that is how this recipe was born. I was planning on making burgers but the turkey meat was still too frozen to make into patties. So I thought I’ll just mix all my ingredients together and make a meat loaf. And you know what it was my family’s new favorite!

Meatloaf is often overlooked, but it makes a wonderful winter meal. It’s warm, filling, and and makes for great leftovers! This recipe makes it extra simple to deliver this comfort food to your family’s table and enjoy together on a busy weeknight.

Ingredients for this simple meatloaf recipe

Here is what you need:

1 lb chopped turkey meat or chopped beef
2 cloves of garlic, chopped
3 tablespoon of butter
1 5oz package fresh baby spinach
1 4oz container crumbled feta cheese
1 egg, beaten
1/4 cup seasoned breadcrumb
1 medium size onion
1/4 cup of your favorite barbecue sauce

Pan fry garlic with a little bit of oil

Step 1: Preheat oven to 400 degrees; chop garlic then add to pan with 2 tablespoons of butter and saute till soft.

Cut onions and cook in oil until caramelized

Step 2: Slice onion and saute in another pan with 1 tablespoon butter. Season with salt and pepper to taste. Cook until caramelized. Then set aside.

Cook spinach with garlic over medium heat until wilted

Step 3: Add baby spinach to pan with garlic and cook till wilted. Remove pan from heat and let cool.

Combine meat, breadcrumbs, cheese, an egg, and spinach in a bowl

Step 5: In a large bowl; mix together chopped turkey meat, cooled spinach and garlic, feta cheese, bread crumb and egg.

Add meat mixture to a loaf pan lined with parchment paper

Step 6: Line bread pan with parchment paper, then add meat mixture.

Top meatloaf with BBQ sauce and onions

Step 7: Top meat with 1/4 cup barbecue sauce and the caramelized onions.

Serve this simple meatloaf with your favorite sides for a super simple dinner

Step 8: Cook for 35-40 minutes. Let cool for 2-3 minutes, then slice and serve with your favorite sides.

Recipe note: Cook time will need to be adjusted if you use a disposable pan. Add 15-20 more minutes depending on size of pan.
