These potatoes are nothing new but boy, oh boy are they good!! I have made them a couple of times and each time, my family devours them. You can use any potato you have in the house, what ever cheese your family loves to make this recipe your own. My family loves the saltiness of the Pecorino Romano.

These can also be made as the base of a meal and topped with our Easy White Bean Chili  or our Slow Cooker Bacon & Beans for a satisfying lunch or weeknight dinner that is quick easy and oh so yummy!

These delicious Smashed Pecorino Romano Potatoes require minimal ingredients!

Here is what you need:

6-8 red potatoes
1  1/2 tablespoons garlic powder
4-5 TBSP butter (room temperature)
1 TBSP dried parsley
Pecorino Romano, shredded
salt and pepper to taste
 

Mix the butter and seasonings.

Step 1: Preheat oven to 400 degrees;  in a small bowl mix together room temperature butter,  garlic powder, dried parsley, salt and pepper. Then set aside.

Wash the potatoes well and cut a small X into each one.

Step 2: Wash potatoes then cut a large x on each one.

Par cook the potatoes.

Step 3: Place potatoes in the microwave for 5-7 minutes to par-cook.

Here comes the fun part: Smash the potatoes!

Step 4: Then place potatoes on baking sheet lined with parchment paper. And place in oven for 20 minutes. After the 20 minutes are up; take potatoes out of oven and smash with potato masher right on the x.

Top each potato with the savory butter.

Step 5: Then add some of the butter mixture to each potato and then put back in the oven for 10 more minutes.

Add cheesy goodness to the potatoes!

Step 6: Once that 10 minutes is up take potatoes out of the oven add some more butter mixture and then top with shredded cheese.

You can serve these delectable Smashed Pecorino Romano Potatoes as a main course or as a hearty side.

Step 7: Cook in oven for 3 more minutes until cheese is melted and crisp. Then serve with your favorite meal or a side salad for a light meal.

Recipe Notes: This recipe can easily be doubled or tripled!
