My husband has a few recipes that are just his and his alone. His omelets are amazing … as are his deviled eggs, his meatball subs, and his grilled cheese sandwiches.
But his very best recipe of all? His chocolate chip banana bread!
Even so, he hasn’t wanted to share his recipe with the world until now. He finally changed his mind when some friends tasted it and begged him for the recipe, and he realized something this good deserves to be shared.
The big secret to his recipe? He uses way more bananas than usual. It’s that simple! We have a banana tree in our backyard that produces a ton of the cutest little bananas, so many that we can hardly keep up with the demand.
In many ways, this recipe was created out of necessity just to use them all!

Here is what you need:
2 cups flour 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon cinnamon 1/8 tsp nutmeg 2 eggs 5-7 ripe bananas, mashed 1 cup sugar 1/2 cup coconut oil 1 cup mini chocolate chipsStep 1: Pre-heat oven to 350. In a medium bowl, mix together flour, sugar, baking soda, baking powder, nutmeg and cinnamon.
Step 2: In a large bowl mix together the mashed bananas, coconut oil and eggs.
Step 3: Then add the dry ingredients a 1/2 cup at a time into the bowl of wet ingredients. Continue adding and mixing until all ingredients are combined.
Step 4: Next add 1 tablespoon of flour to your mini chocolate chips and then add into banana bread mix.
Step 5: Place mixture into a generously greased loaf pans with nonstick cooking spray and bake for 55-60 minutes or until toothpick inserted comes out clean. Then let cool for 3-5 minutes, remove from pan, slice and enjoy!

Chocolate Chip Banana Bread
This is my husband's secret banana bread recipe and it is super moist and full of yummy goodness. It also freezes really well.
Ingredients

- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 2 large eggs
- 5-7 ripe bananas (mashed)
- 1/2 cup coconut oil
- 1 cup mini chocolate chips

Recipe Notes
Allow the bread to cool on a wire rack before removing from the pan and storing or freezing. You can wrap the cooled bread in saran wrap and place in a Ziploc bag to store in the fridge or freezer for up to 1 month.

I would love to make this but I’m gluten free. Would a gluten free 1 to 1 all purpose flour mix work in this?

What is 5-7 bananas? 1 cup? 2 cups? We have huge organic bananas sometimes, sometimes normal size, sometimes smallish…is there more of a measure in cups?
