Fish Tacos with Pepper Jelly

Ingredients

  • 2 lbs. fresh or frozen cod halibut or tilapia
  • 1 teaspoon Grill Mates Chipotle & Roasted Garlic seasoning
  • 2-4 tablespoons butter
  • 1 package coleslaw mix
  • 1 10 oz. bag shredded carrots
  • 2 -4 limes juiced
  • 10.5 oz. jar pepper jelly
  • 1-2 jalapenos diced
  • 1 large clove garlic minced
  • 2 teaspoons soy sauce
  • 12-16 16-inch flour tortillas

Instructions

  1. If fish is frozen be sure to defrost. Then pat fish dry with paper towels then sprinkle fish with seasoning.
  2. Melt butter in pan. Then add fish and cook for 2-4 minutes per side until fish is opaque. Then set aside. (* Adjust cooking time if your fish is thicker.)

  3. In a small sauce pan mix together 2 cups of pepper jelly, lime juice, diced jalapenos, soy sauce and garlic. Cook on low heat till jelly has melted.
  4. In another bowl, mix together shredded cabbage and carrots.
  5. Wrap tortillas in foil and heat in oven for 5-10 minutes.
  6. Add cabbage and carrot mixture to tortilla then add fish. Spoon pepper jelly on top and enjoy!
