Simple Greek Pasta Salad

This simple cold pasta salad is a delicious light meal, just in time for Summer.

  • Tri-color pasta Rotini
  • 1/2  6 oz. bag fresh baby spinach
  • 1 large cucumber
  • 1 container Feta crumbles
  • 1 container grape tomatoes
  • 1 jar Greek olives
  • salt & pepper
  • 4- 6 tablespoons Olive oil
  • 2-4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 lemon juiced


  1. Mince garlic and juice lemon then set aside

  2. In a mason jar, mix together olive oil, lemon juice, oregano, salt, pepper and minced garlic.
  3. Wash tomatoes, then slice and set aside.
  4. Peel, seed and dice cucumber, then set aside.
  5. Chop fresh spinach and set aside. 

  6. Pitt olives and set aside.

  7. Cook pasta according to package, drain and run under cool water.

  8. In a large bowl mix together pasta and all chopped ingredients. If serving right away, add dressing and top with feta crumbles.

  9. Pasta salad can be served cold or at room temperature.
