Breakfast Cookie

This healthy cookie can help you feed your kiddos fast without any mom guilt.

Ingredients

  • 1 1/4 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup cooked quinoa cooled and dried
  • 1/2 cup flaxseed meal
  • 1 drop Cinnamon Bark Vitality™ essential oil or 1 tsp ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter softened
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 cup cranberries or raisins
  • 1/2 cup chopped walnuts optional

Instructions

  1. Preheat oven to 350 degrees; then in a large bowl, mix together butter, white and brown sugar, eggs, honey, cinnamon bark vitality essential oil and vanilla extract.
  2. In a medium bowl mix together flour, oats, quinoa, flax seed meal, baking powder, baking soda and salt .
  3. Then add dry ingredients into wet ingredients, until all is combined.
  4. In a small bowl add 1 tablespoons of flour with the dried cranberries and walnuts.Then mix into the cookie batter.
  5. Spoon tablespoons of batter onto baking sheets, lined with parchment paper.
  6. Bake for 10-12 minutes or until bottoms are lightly browned.
