Easy Greek Salad

This super easy and delicious salad is the perfect solution to dinner any time!

  • 1-2 heads romaine lettuce washed, dried and chopped
  • 12 oz. jar Greek black olives pitted & sliced (*regular black olives can be used as well)
  • 1 green bell pepper chopped
  • 1 pint cherry or grape tomatoes washed
  • 1 large cucumber peeled,seeded and chopped
  • 1/2 red onion thinly sliced
  • 4 ounces feta crumbles


  • 1/2 cup olive oil
  • 2 lemons juiced
  • 2-3 cloves garlic chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 2 tablespoons Dijon mustard


  1. Make dressing; whisk together olive oil, lemon juice, chopped garlic, Italian seasoning, black pepper and Dijon mustard until blended. Set aside.
  2. Chop lettuce and pepper and set aside.
  3. Cut thin slices of red onion; set aside.
  4. Wash tomatoes and set aside. Then pit olives and set aside.
  5. In large bowl; combine lettuce, peppers, tomatoes, olives, red onion, and cucumber. Mix dressing again and toss with salad. 

  6. Add feta to top of salad and serve.

Recipe Notes

If not serving salad right away, reserve salad dressing in small mason jar and store in fridge until needed.
