Remove core from cabbage; chop cabbage into small pieces.
Place cabbage in large bowl; add matchstick carrots and mix well.
Crush Ramen noodles with rolling pin or other heavy object; open package, remove seasoning mix, and add to cabbage mixture. Mix well.
Toast sesame seeds for 1 minute in small pan over medium heat. Add seeds to cabbage mixture. (optional)
Add salad dressing; toss well. Refrigerate salad for 2 hours, then serve.
