Spicy Chocolate Cookies

These cookies combine chocolate and a little heat. They are the prefect treat to add to your holiday baking list.

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 1 stick unsalted butter softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl; beat butter and sugar until creamy.
  2. Then add egg and vanilla and beat on high until mixture is airy.
  3. In another bowl: mix together the flour, cocoa powder, cinnamon, salt, pepper and cayenne.
  4. Add flour mixture into the butter mixture about 1/4 cup at a time until all flour is mixed in.
  5. Place mixed dough on wax paper and form into a cylinder about 10 inches long and 1 1/2 inches in diameter. Wrap tightly with plastic wrap and place in fridge for 45 minutes or freeze until needed.
  6. Preheat oven to 375 degrees; unwrap dough and cut into slices about 1/4 inch thick. Place on baking sheet lined with parchment paper about an inch apart.
  7. Bake for 10 -12 minutes, then let cool on cookie sheet then continue to let cool on wire rack.

Recipe Notes

I added a drizzle of melted chocolate and coarse sugar to cookies once cooled. To make them a bit more holiday special.
