Ingredients
1 1/2cupsflour
3/4cupunsweetened cocoa powder
1/2teaspoonground cinnamon
1/4teaspoonsalt
1/8teaspoonblack pepper
1/8 to 1/4teaspooncayenne pepper
1stick unsalted buttersoftened
1cupbrown sugar
1large egg
1teaspoonvanilla extract
Instructions
In a large bowl; beat butter and sugar until creamy.
Then add egg and vanilla and beat on high until mixture is airy.
In another bowl: mix together the flour, cocoa powder, cinnamon, salt, pepper and cayenne.
Add flour mixture into the butter mixture about 1/4 cup at a time until all flour is mixed in.
Place mixed dough on wax paper and form into a cylinder about 10 inches long and 1 1/2 inches in diameter. Wrap tightly with plastic wrap and place in fridge for 45 minutes or freeze until needed.
Preheat oven to 375 degrees; unwrap dough and cut into slices about 1/4 inch thick. Place on baking sheet lined with parchment paper about an inch apart.
Bake for 10 -12 minutes, then let cool on cookie sheet then continue to let cool on wire rack.
Recipe Notes
I added a drizzle of melted chocolate and coarse sugar to cookies once cooled. To make them a bit more holiday special.
