Smashed Pecorino Romano Potatoes

These potatoes are so much easier than mashed and have just 5 ingredients that make them so tasty!

  • 6-8 red potatoes
  • 1  1/2 tablespoons garlic powder
  • 4-5 TBSP butter room temperature
  • 1 TBSP dried parsley
  • Pecorino Romano shredded
  • salt and pepper to taste


  1. Preheat oven to 400 degrees;  in a small bowl mix together room temperature butter,  garlic powder, dried parsley, salt and pepper. Then set aside.
  2. Wash potatoes then cut a large x on each one.
  3. Place potatoes in the microwave for 5-7 minutes to par-cook.
  4. Then place potatoes on baking sheet lined with parchment paper. And place in oven for 20 minutes. After the 20 minutes are up; take potatoes out of oven and smash with potato masher right on the x.
  5. Then add some of the butter mixture to each potato and then put back in the oven for 10 more minutes.
  6. Once that 10 minutes is up take potatoes out of the oven add some more butter mixture and then top with shredded cheese.
  7. Cook in oven for 3 more minutes until cheese is melted and crisp. Then serve with your favorite meal or a side salad for a light meal.
