Coconut Lime Chicken

This easy Coconut Lime Chicken is full of flavor but takes just minutes and can be frozen ahead for an effortless summer dinner your family will LOVE!

Nothing says summer like dinner on the grill! This easy-peasy coconut lime chicken is another favorite “cheater” freezer recipe–it is almost like taking a trip to the Caribbean without a passport! Not only is it almost ridiculously easy and practically mess-free, it also involves the grill, which makes my husband extra happy.

To make it as part of a freezer cooking day, just split the marinade & chicken into multiple bags, then throw it right into the freezer–no cooking required! Making it ahead of time is not necessary, though, as it is equally delicious just marinated at room temperature

You can use any type of chicken but my family much prefers the boneless, skinless chicken thighs, which are a darker, juicier meat and also tend to be cheaper than the boneless skinless breasts.

Coconut Lime Chicken

Here is what you need:

3-4 limes
1/4 cup olive oil
1 can coconut milk
3-4 cloves garlic
1/4 cup onion, diced
1/4 teaspoon ground ginger
2 teaspoons seasoned salt
1/2 teaspoon black pepper
1/2 cup fresh parsley, chopped (optional)
3.5-4 pounds boneless chicken

Step 1:  Squeeze limes to release 1/3 cup of fresh lime juice.

Step 2: Mince or crush garlic in garlic press.

Step 3: Whisk lime juice, olive oil, coconut milk, minced garlic, diced onion, ground ginger, parsley, seasoned salt, & pepper together in bowl, then divide into 2 1-gallon freezer bags. (If freezing, be sure to label bags ahead of time.)

Step 4: Marinate chicken in bag for at least 30 minutes or longer, or press out air from bag and freeze.

Step 5: Thaw if frozen. Grill 6-8 minutes per side, basting with additional marinade, if desired.

  • I cooked this as part of the 10 freezer meals in an hour series. HUGE hit! So much that my extended family requested it for one of our camping meals for all. Love that idea because I can cook it in the comfort of my kitchen at home, use it to cool my freezer on the trip and then have a delicious ready made dish to grill with no cleanup in the camper! Only issue is that I haven’t quite found the perfect side dishes for it… Goes well with rice but that’s so boring! Suggestions? Particularly for someone who skews Whole30 friendly?

  • So easy to prep ahead! I let my chicken marinade in the fridge for about four hours and the chicken was moist, zesty and flavourful! I made a few changes that worked out great, I cooked the chicken on a frying pan (no bbq!) and squeezed a lime over the chicken after cooking for extra flavour. Ill definitely be making again with more coconut!

  • I added a tablespoon of Thai red curry paste to my marinade...froze them in two 4 packs of bone in thighs...loved the hit of spice!

  • This recipe sounds great! Quick question, I noticed that there's an onion shown in the picture of all the ingredients but it is not in the recipe. Does it make a difference with/without it? Thanks!

    • Thanks for bringing that to our attention. You can leave it out if you would like. If you are going to add the onion. Add just 1/4 cup of diced onion to mixture.

      • My adult son is something of a foodie and he says this is a great dish. He also wants me to buy him a crockpot as a house warming gift so he can make Easy Garlic Chicken, Honey Sriracha Chicken, 5 Ingredient Potroast, all of which have been delicious. How easy can you get! My husband also says that since I have been doing the freezer cooking (all with your recipes, I might add) it has made life around our house so much easier. Wish I had known about this when my children were small, but you are the same age as my children and the internet hadn't been invented yet!!! Ladies, try these recipes.
