Since no such magic genie exists, I’m here to offer you a simple and super yummy dinner recipe made with nutritious, energizing foods – all on one sheet pan, and with only 5 main ingredients. Maple Glazed Sheet Pan Salmon with Potatoes and Green Beans is one of the best easy weeknight dinners you could make for your family.

A few bonus tips for this recipe:

For easy clean up, cover the sheet pan with aluminum foil.

If desired, serve with lemon wedges, chopped parsley, tartar sauce, and brown rice.

The green beans will be completely soft using the cooking directions in the recipe. If you prefer crunchy green beans, do not add them in the first round of baking. Instead, toss the green beans in oil and add them to the sheet pan along with the salmon and they will cook just until slightly softened during the broiling time.

Maple Glazed Sheet Pan Salmon with Potatoes and Green Beans

Here is what you need:

1 pound fresh green beans

1 pound small Yukon Gold potatoes

2 tablespoons olive oil

Salt and pepper to taste

4 salmon fillets, 6 ounces each

2 tablespoons all-natural real maple syrup

2 tablespoons Dijon mustard

 

Step 1: Preheat the oven to 400° F. To make this fantastic sheet pan salmon dinner, start by washing fresh green beans and removing the ends. This could be a good job for a child since the ends can snap off without a knife.

Step 2: Next, cut small Yukon gold potatoes into bite sized chunks. It is important that the chunks are small, about 1 inch each, so that they cook through during the baking time. If they are too big, they will not cook as quickly as the green beans and salmon.

Step 3: Spread the potato chunks and green beans onto a large sheet pan. Drizzle with 2 tablespoons of olive oil and toss until well coated. Season with salt and pepper. Bake the potatoes and green beans at 400° F for 12-15 minutes, just until they start to soften. Remove the sheet pan from the oven and use a spatula to move the vegetables to the sides of the pan, creating space in the center for the salmon.

 

Step 4: Pat the salmon fillets dry with paper towels. Season with salt and pepper. Place the salmon in the center of the sheet pan, skin side down, with 1 inch of space between each filet.

Step 5: In a small bowl, combine maple syrup and Dijon mustard. Brush the glaze over the top and sides of each salmon filet.

Step 6: Place the sheet pan with the salmon, potatoes, and green beans in the oven and set to broil (525° F). Broil on a center rack (not too close to the heat) for 7-10 minutes, until the salmon is flaky and the vegetables are tender. The exact cooking time depends on the thickness of the fillets, so check them at 7 minutes.

Remove the sheet pan from the oven and serve the salmon, potatoes, and green beans immediately.
