This is my husband's secret banana bread recipe and it is super moist and full of yummy goodness. It also freezes really well.
Pre-heat oven to 350. In a medium bowl, mix together flour, sugar, baking soda, baking powder, nutmeg and cinnamon.
In a large bowl mix together the mashed bananas, coconut oil and eggs.
Then add the dry ingredients a 1/2 cup at a time into the bowl of wet ingredients. Continue adding and mixing until all ingredients are combined.
Next add 1 tablespoon of flour to your mini chocolate chips and then add into banana bread mix.
Place mixture into a generously greased loaf pans with nonstick cooking spray and bake for 55-60 minutes or until toothpick inserted comes out clean. Then let cool for 3-5 minutes, remove from pan, slice and enjoy!
Allow the bread to cool on a wire rack before removing from the pan and storing or freezing. You can wrap the cooled bread in saran wrap and place in a Ziploc bag to store in the fridge or freezer for up to 1 month.
