Chop half the parsley and shallot and set aside.

In a measuring cup add the butter, chopped parsley and chopped shallot and mix well.

Then cut the lemon in half and juice.

Save lemon halves and clean chicken, remove giblets and set aside.

Wash celery then chop in half and place in bottom of crock pot.

Place chicken on top of celery, breast side up, lift up the skin on breast and add the parsley, shallot and butter mixture.

Then add lemon juice, parsley sprigs and lemon halves to cavity of chicken.

Then sprinkle season salt to top of chicken breast.

Add a half cup of water to bottom of crock pot and cook on low for 6-7 hours.

Serve chicken with your favorite sides.
