Zucchini Bread

Ingredients

  • 4 medium zucchini (grated)
  • 4 cups all-purpose flour
  • 2 1/2 cups whole wheat flour
  • 1 TBSP baking soda
  • 1 TBSP baking powder
  • 2 TBSP ground cinnamon
  • 8 large eggs
  • 1 1/2 cups vegetable oil
  • 3 cups white sugar
  • 2 TBSP vanilla
  • 2 cups chocolate chips (optional)

Instructions

  1. Preheat oven to 325. Grease 2-4 loaf pans depending on their size. Grate zucchini to make approximately 6 cups; set aside. Make sure to press out the excess water from the zucchini before adding to batter.

  2. In a large bowl, mix together flour, baking soda, baking powder, & cinnamon.

  3. In separate bowl or Kitchen-aid, beat together eggs, oil, sugar & vanilla.

  4. Add zucchini, 1 1/2 cups chocolate chips and dry ingredients to wet mixture and mix until combined.

  5. Divide mixture into loaf pans and top with some more chocolate chips. (Optional) And bake for 1 hour or until toothpick comes out clean.
