Preheat oven to 325. Grease 2-4 loaf pans depending on their size. Grate zucchini to make approximately 6 cups; set aside. Make sure to press out the excess water from the zucchini before adding to batter.
In a large bowl, mix together flour, baking soda, baking powder, & cinnamon.
In separate bowl or Kitchen-aid, beat together eggs, oil, sugar & vanilla.
Add zucchini, 1 1/2 cups chocolate chips and dry ingredients to wet mixture and mix until combined.
Divide mixture into loaf pans and top with some more chocolate chips. (Optional) And bake for 1 hour or until toothpick comes out clean.
