This easy Coconut Lime Chicken is full of flavor but takes just minutes and can be frozen ahead for an effortless summer dinner your family will LOVE!
Nothing says summer like dinner on the grill! This easy-peasy coconut lime chicken is another favorite “cheater” freezer recipe–it is almost like taking a trip to the Caribbean without a passport! Not only is it almost ridiculously easy and practically mess-free, it also involves the grill, which makes my husband extra happy.
To make it as part of a freezer cooking day, just split the marinade & chicken into multiple bags, then throw it right into the freezer–no cooking required! Making it ahead of time is not necessary, though, as it is equally delicious just marinated at room temperature
You can use any type of chicken but my family much prefers the boneless, skinless chicken thighs, which are a darker, juicier meat and also tend to be cheaper than the boneless skinless breasts.

This looks very good – and it’s compatible with our family food allergies! One thought I had: I think bone-in thighs or breasts would work, too, and possibly even hold together better on the grill, plus the presence of the bones adds even more flavor and preserves some moistness. I often find bone-in thighs as cheap as 79 cents per pound.
Yes, we use thighs but my husband prefers the bone-in version because it is easier to grill!
I’ve actually made this now, and it was very good. I used bone-in thighs and fresh grated ginger instead of ground. Also, right as I was about to grill them a dramatic thunderstorm blew in, so I had to revise the plan and broil them, which also worked. I look forward to actually grilling the half batch I put in the freezer. (I know it’s late to comment, but when I’m looking for recipes, I always like seeing comments by people who have actually tried the recipe.)
I always read the comments before making a new recipe too! The best ones are from people who made it (Not the “I can’t wait to try this!” ones LOL)
Making this tonight – thanks for posting how it went for you! Might be storming here this evening so I might be broiling also!
This looks delicious! What sort of sides would you recommend putting this with?
We like yellow rice & a simple green salad! 🙂
That sounds delicious! Thanks!
