Here is what you need:
1 bag tortilla chips 4-6 large eggs 1 8oz. bag shredded cheese 1 jar salsa 1 4 oz. container sour cream Step 1: Fill two bowls with tortilla chips, then set aside. Step 2: Spray pan with cooking spray, then beat 4 eggs. Mix well and add to warmed pan. Step 3: Cook until eggs are done. Split cooked eggs over tortilla chip. Step 4: Top with salsa, shredded cheese and a dollop of sour cream. Step 5: Serve along side some fresh fruit and enjoy!

They serve something similar to this in Mexico. They don’t have salsa like that here, for which I lament over a lot! The sauce here is more liquidy, but still very good. It’s one of my favorite breakfasts here, and a sure favorite of the locals.

Nachos for Breakfast?
Overnight oats are perfect for children.
I make a big pot in the evening where I mix milk, oats and some fruit mash (mostly apples, that I have been throwing in the mixer) and put it in the fridge.
In the morning I just have to put a ladle full in a bowl.
Its much healthier.
And my children eat 2-3 days from it.
They eat it since they eat complementary food and love it.
