I have a confession.  I’m not really a cake person, at least not usually.  I much prefer brownies.  Or fresh blueberry pie.  Mmmmmmm…..pie….

The problem I have with most cakes is that they are either too dry or the frosting is too sweet, or both.

That was, of course, until I discovered this particular cake, which is apparently a Southern institution, right along with sweet tea and pimiento cheese.   It is a little like banana bread with frosting, but even better.  The original recipe comes from a 1978 issue of Southern Living Magazine but cuts back a little on the oil and nuts and adds a little coconut as well.  You could just as easily skip both the nuts and the coconut if those aren’t your thing.  Also, it is a great way to use up those overripe bananas!

And the frosting.  Oh, the frosting.  I use my Browned Butter Cream Cheese Icing because, well, it is pretty much the yummiest thing on the planet, and the slightly caramelized flavor of the brown butter is the perfect compliment to the richness of the cake.  Don’t skimp on the frosting, or flake out and buy the store bought stuff.  Its not that hard, and it is totally worth the effort!

Here is what you need:

3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons vanilla extract
3 eggs
1 cup vegetable oil
2 cups very ripe chopped bananas
8 oz. crushed pineapple (undrained)
1/2 cup chopped pecans (optional)
1/2 cup coconut
Browned Buttter Cream Cheese Icing
3/4 cup coconut for top (optional)
1/2 cup pecans for top (optional)
softened butter & flour for greasing pan

Step 1:  Grease & flour 2 9″ round baking pans.

Step 2: Beat eggs in small bowl.

Step 3:  Add eggs and oil to flour mixture; stir with spatula just until moistened.

Step 4: Stir in bananas, pineapple, pecans, vanilla, and coconut.  Mix at medium speed until well blended, about 1 minute.

Step 5: Pour batter into baking pans.  Bake at 350 for 30-35 minutes, until knife inserted into middle of cake comes out clean.

Step 6:  Cool in pan on wire rack for 10-15 minutes, then invert cakes onto wire rack and cool completely.

Step 7:  Spread coconut and/or pecans on baking sheet; bake at 350 degrees for 5-8 minutes until toasted.

Step 8: Spread Browned Butter Cream Cheese Frosting between layers and on top and sides of cake.  Sprinkle top with pecans and/or coconut if desired.

    Your cake sounds wonderful. I too struggle with cakes and lots of sweets because they are, well, too sweet!!! I guess that’s why I’m drawn to chocolate, it’s usually a safer bet for sweetness (most of the time!). Comparing the cake to banana bread, did it for me. There are bananas on the counter waiting to ripen….maybe I should just wait a week. Mmmm…I can hardly wait! Thanks Ruth!!

    Yum! My mom used to make a cake like this every year for my birthday. I love the sweet chunks of pineapple dispersed throughout the cake…. although, I ‘ve never tried browned butter frosting so I just might have to make your version soon!! 🙂

    This looks amazing
    But I need your help in something we do not have 8 oz cans of crushed pineapple
    We only have 850 grams of whole pieces with juice
    How can I measure the amount needed from this 850 grams can which is equivalent to 8oz required for this recipe
    I really wana make it plzzzz

      I just used a measuring cup and then put that amount into a food processor and blended it into crushed pineapple. I hope that helps!

    I admit that I only make cakes for special occasions, but this looks like one to add to the repertoire. I’ve heard of the cake, but have never had, nor made it, and my mother was from the south. lol

    Lisa, I’m a hand mixer girl myself. I mix my cookie dough by hand (whisk and spoon), and my cakes with my trusty little hand held mixer. 🙂

    I am considering making this Hummingbird Cake to enter in a baking contest later this year, but cannot use the cream cheese frosting. (The contest rules state very specifically that items needing refrigeration are not allowed, including cream cheese frosting, whipped cream frosting, cheesecakes, congealed salads, etc. But Buttercream Frosting IS allowed!) Does anyone have suggestions for what other kind of frosting to use on a Hummingbird Cake? Would browning part of the butter used in Buttercream Frosting work? Or a boiled caramel frosting? Any thoughts or ideas would be appreciated.

    This version of hummingbird cake with coconut is exactly what I am looking for and hope to make it for Easter! I noticed that vanilla is in the picture of the cake ingredients, but was not in the recipe. Is it meant for the cake or just the frosting and if so, how much? Thanks!

      Hi Allie,
      There is 1 1/2 teaspoons of vanilla in the cake mixture and also 1 teaspoon in the Browned Butter Cream Cheese Icing. 🙂
