I mean, seriously?
Nachos for Breakfast?
Overnight oats are perfect for children.
I make a big pot in the evening where I mix milk, oats and some fruit mash (mostly apples, that I have been throwing in the mixer) and put it in the fridge.
In the morning I just have to put a ladle full in a bowl.
Its much healthier.
And my children eat 2-3 days from it.
They eat it since they eat complementary food and love it.
Anything that allows me to eat nachos for breakfast is a win. These look great! They’re easy and don’t require a ton of work in the morning.

What a great idea! I bet my kids would love these.
They are such a fun alternative to plain old scrambled eggs. 🙂
Oh my word, nachos for breakfast?! YES, please!!! Pinned and waiting in anticipation for breakfast tomorrow morning. 🙂 🙂 Thanks for always sharing the greatest recipes!
This is a favorite weekend breakfast in our house! 🙂
They serve something similar to this in Mexico. They don’t have salsa like that here, for which I lament over a lot! The sauce here is more liquidy, but still very good. It’s one of my favorite breakfasts here, and a sure favorite of the locals.
Sounds good, but I will use Pita to keep salt lower.
